On September 27, the Tree Stewards will again join their fellow Master Gardeners at AFM, 8 to 11 AM to help answer your tree
care, landscaping, lawn and garden questions. This will be the last weekend for them, so be sure to bring all your fall care
and winter prep questions.
Recipe of the Month -- Spinach Soup with Feta
- 2 pounds spinach
- ¼ pound mushrooms
- 1 garlic clove, crushed
- 1 cup feta cheese, crumbled
- 4 scallions, sliced
- 3 cups milk
- salt, pepper to taste
- several tablespoons butter or oil
- 8 ounces plain yogurt
Saute mushrooms in oil or butter, set aside. Saute onions and garlic in oil until tender. Add spinach, cover and steam
5 minutes. Add milk and simmer until heated through. Put spinach mixture in blender and puree. Add mushrooms, yogurt and
reheat. Serve with sprinkling of feta.
