Recipe of the Month
We all know basic Macaroni and Cheese. Cook elbow macaroni to instructions, and drain. To the hot noodles, add cubed cheddar
cheese available at the AFM from Fields of Grace, and stir over medium heat till melted. Add a splash of milk to
thin; or to thicken, melt a tablespoon of butter and mix in 2 tablespoons of flour, and slowly add to cheese.
Follow the same pattern for a simple Fettuccine Alfredo. Cook noodles as instructed. Drain, but do not rinse. Melt a few
tablespoons of butter to coat saucepan. Stir together warm noodles, 1 cup of AFM cheese of your choice. Try one of the soft
flavored cheeses such as the Tomato Pesto from Blue Highland Dairy or herb Mozzarella cheese from Blue Ridge Dairy.
Serve topped with Sauteed mushrooms. You may also/instead add cream; add chopped basil or oregano; Chives or scallions.
But please, no frozen peas.
