Artisan creamery producing fresh and smoked mozzarella, ricotta, feta, yogurt, greek yogurt, kefir (seasonal), butter.  The creamery uses fresh jersey cow’s milk from local dairies in Maryland and Virginia.  Traditional Italian cheesemaking techniques are used in the production of our award winning fresh mozzarella.  The combination of high butterfat jersey cow’s milk, lactic fermentation, hand stirring, and gentle stretching and molding, are what we incorporate to produce our rich and buttery fresh mozzarella.  The dairy produces three sizes of fresh mozzarella. A single 8 oz mozzarelle, two four oz ovaline, and eight one oz. bocconcino.   All yogurt and kefir is PROBIOTIC, making it a tremendous benefit to gut health.  Probiotics are “good bacteria” that have the ability to keep “bad bacteria” at bay.  Our butter is gently cultured overnight before churning, giving it a pleasant flavor and aroma.
